June's Cornbread Supreme


This is a family favorite of ours for cornbread, given to us by our dear friend June and adapted by me. This is a lovely side for chili. 

 Ingredients:

1/2 cup sugar
3/4 cup butter
4 eggs
1 can creamed corn or normal corn
1 cup flour
1 cup cornmeal
4 teaspoons baking powder
1/4 teaspoon salt
1 cup shredded cheese (jack and cheddar)

Method:
  1. Preheat oven to 350 F/ 175 C
  2. Melt butter
  3. Mix together all ingredients
  4. Bake in 9x13 greased pan or in iron skillet ( this is what I do) 
  5. Bake until golden and until toothpick inserted comes out clean- 20-40 minutes. .

Tortillas

Home made tortillas are a must for anyone who loves tacos and lives on a budget. Especially if your residence is in a country where these are expensive. Thanks to a dear friend for this great and easy recipe!

Ingredients: Makes 6 ( I always double this)
2 cups flour 
1 1/2 t. baking powder
1 t. salt
2 t. oil
3/4 c. warm water

Method:
1. Mix oil and water, and flour and dry ingredients separately.

 2 Mix oil mixture into flour mixture a little at a time. It will be sticky.

3. Knead on a lightly floured surface 4-5 min, until smooth and no longer sticky. Cover and lest rest 20 minutes.
4. Divide into balls.

5. Roll as thin as possible, using some flour to keep from sticking.

6. Cook on a hot, dry skillet until bubbly and slightly puffy on both sides.

7. Wrap in a towel to keep from drying out.
