Pumpkin Cream Cheese Muffins

Chocolate Revel Bars


This recipe is adapted from the original recipe in the cookbook Bless This Food.

Ingredients:

1 c. margarine or butter
1 c. white sugar
1/2 c. brown sugar
2 eggs
2 1/2 c. flour
1 t. baking soda
1/4 t. salt
3 c. oatmeal
2 t. vanilla

Filling:
12 oz chocolate chips ( I used 200 g. dark chocolate)
1 (15 oz.) can sweetened condensed milk
2 T. butter or margarine
1 c. chopped walnuts
2 t. vanilla

Method:

  1. Preheat oven to 350 F / 175 C. 
  2. Cream butter and sugar until light and fluffy. 
  3. Mix in eggs and vanilla
  4. Add dry ingredients and stir until well blended. 
  5. Press 2/3 of this mixture into 9x13 in. pan. 
  6. Prepare filling by melting together the chocolate with the sweetened milk and butter. 
  7. Add remaining ingredients to filling and mix well. 
  8. Pour this chocolate sauce over oatmeal mixture in pan. 
  9. Dot with remaining oatmeal mixture. 
  10. Bake at 350 degrees F or apx. 175 degrees C until golden brown
  11. Makes about 40 bars.

Carrot Cake

3/4 cup oil or melted margarine
4 eggs
3 cups shredded carrots
1 1/2 teaspoons vanilla
1 1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon salt (if using margarine,I never use salt)
2 cups flour
1/2 cup chopped nuts
1 orange peel grated
3/4 cup raisins (optional)

Mix wet ingredients and dry ingredients separately. Then fold together, don't over stir. Pour into greased pan.

Cream Cheese Frosting:
3 oz. cream cheese- Philadelphia, or in Latvia use Karums Svaigais Siers
1/4 cup softened butter
2 cups powdered sugar

Cream together,add a bit of milk if too thick.

Garlic Breadsticks

 

Ingredients

  • 1 1/8 cups water (70 to 80 degrees F)
  • 2 tablespoons olive or canola oil
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons sugar
  • 3 teaspoons garlic powder (I used real garlic)
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon minced fresh basil
  • 3 cups bread flour
  • 2 teaspoons active dry yeast
  • 1 tablespoon butter or stick margarine, melted

Directions

  1. In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface. Divide into 20 portions. Shape each into a ball; roll each into a 9-in. rope. Place on greased baking sheets. Cover and let rise in a warm place for 40 minutes or until doubled. Bake at 350 degrees F for 18-22 minutes or until golden brown. Remove to wire racks. Brush warm breadsticks with butter.
